Autumn Slaw Salad

A delicious power-house salad to have you feeling golden within. You are what you eat!

Combining these flavours tastes extra juicy and compliments our creamy coconut and red lentil curry on our other recipe posts

 

Ingredients (organic where possible): 

!/2 (or small) Red cabbage

1 Fennel

2 (or three) Carrots

1 Red onion

1 bunch Radish

1 bunch Mint

1 bunch Coriander

Dressing: 

2 tbsp Maple Syrup (or honey if not vegan)

2 tbsp Mayo (vegan)

1 or 2 Lime juice (to taste)

3-4 tbsp Organic Extra Virgin Olive Oil

Salt & pepper to taste

Decorate:

Pomegranate seeds

Pecans

INSTRUCTIONS:

  1. Make dressing by combining all ingredients then whisk and place to one side in fridge (until ready to serve)
  2. Finely chop  red cabbage, onion, fennel, slice radish (rounds), finely chop coriander & mint, grate carrots – add to your chosen bowl thinking about presentation too
  3. Add dressing and decorate with pomegranates & pecan halves
